A World of Flavor in the Heart of Palmerston
In the kitchen of Bombay Hub Restaurant, the air is thick with the aroma of hand-ground spices and the warmth of a clay oven. This isn’t just a place to eat; it is the culmination of a global journey led by Owner and Chef Atul, a man whose passion for authentic North Indian cuisine has traveled across oceans and continents before finding its permanent home right here in Palmerston.
From Finance to the Flavors of Home
Atul’s culinary journey began in an unlikely place: Coventry University in England while he was pursuing a Master’s Degree in Finance. Finding himself 45 minutes away by train from the nearest taste of home, Atul decided to take matters into his own hands. When a local restaurant owner mentioned a need for a chef, Atul stepped up to the challenge. Within weeks, his “kitchen magic” turned that local spot into the most popular house in town.
That experience sparked a career that took him around the world as a trained Executive Chef with the Marriott hotel chain, from the vibrant streets of Dubai to the kitchens of Michigan. In 2017, after running a successful Indian restaurant in Hamilton, a friend encouraged him to look at the Minto area. Atul took the leap, opened his second location in Palmerston, and quickly realized this was the perfect place to raise his family and put down roots.

Freshness You Can Taste
What sets Bombay Hub apart is Atul’s unwavering commitment to quality. Drawing on his North Indian roots, he uses only fresh ingredients and spices to create an “out of this world” flavor palette. You won’t find anything frozen in his kitchen; every meal is made fresh to order.
If you’re visiting for the first time, there are a few “must-tries” on the menu:
- Chef’s Favorite: The legendary Chicken Tikka Masala.
- Nancy’s Favorite: The Paneer Mushroom Masala, a rich and flavorful vegetarian delight.
- The Perfect Pairing: Freshly made Naan cooked in a traditional stone oven.
- A Fan Favorite: The Mint Lemon Mojito, a fresh juice that serves as the perfect refresher for those long summer days.
Why Supporting Bombay Hub Matters
Atul has brought world-class training and a global perspective to our downtown, enriching our community with every hand-cooked meal. While the “Full Steam Ahead” project might mean a slight detour or a bit of construction noise outside, the hospitality inside remains as warm as the stone oven.
Choosing to visit Bombay Hub during these next two construction seasons is a powerful way to support a family that chose Palmerston as their home. Every order of Tikka Masala or fresh Lemon Mojito helps ensure that the vibrant, diverse flavors Atul brings to our town continue to thrive long after the new roads are finished.
Next time you’re navigating the orange cones, let the scent of fresh spices guide you to a world-class meal right in your own backyard.
